Microwaved Veggie Rice Bowl


for 1 serving

½ cup rice (100 g)

1 cup water (470 mL)

1 teaspoon olive oil

¼ cup black beans (40 g)

¼ cup tomato (50 g), chopped

salt, to taste

pepper, to taste

½ avocado, chopped

fresh cilantro, to serve


In a bowl, combine the rice, water, and olive oil.

Stir, then microwave, covered, for 6-8 minutes until the rice is fully cooked.

Carefully remove the lid, then add black beans, tomatoes, salt, and pepper. Stir to combine.

Top with avocado and cilantro if desired.
